Fried Rice

1-2 chicken breasts, chopped
3 scrambled eggs (chopped fine)
2 carrots, finely grated
1/2 white onion, finely chopped
3/4 cup frozen peas
1/2 cup butter
1-2 garlic cloves minced, or 1 tsp garlic powder
2 cups white rice (not instant)
Soy sauce

Marinate chicken in soy sauce, or mix it with chicken before cooking. Cook chicken in small amount of olive oil. Add carrots and onions and saute' until clear. Add frozen peas. Cook until soft. In separate pan, make and add rice to the mixture. Add scrambled eggs. Melt butter and add garlic then pour into mixture. Mix all together well. Add soy sauce to taste.

Egg Fu Yung

2 cups Celery, chopped
2 cups onion, chopped
2 cups chicken, chopped
2 cups bean sprouts
9 eggs

Mix all ingredients together until foamy. Spoon mixture onto fry pan. Fry until brown and turn over and brown the other side.

You may also mix and store mixture in refrigerator for up to 3 days and then fry when you want.
