BBQ Beef Sandwiches

Ingredients:
3 cups chopped celery
1 cup chopped onion
1 cup ketchup
1 cup bbq sauce
1 cup water
2 Tbsp. vinegar
2 Tbsp. worcestershire sauce
2 Tbsp. brown sugar
1 tsp. chili powder
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1 boneless roast (3-4 pounds)


Directions:
In slow cooker, mix all ingredients except roast. Mix well. Add roast. Cover and cook on high 6-7 hours or until tender. Remove roast; cool. Shred meat and return to sauce; heat through. Serve on buns.

Taco Dinner

Ingredients:
1 lb beef
1 pkg taco seasoning (I only use a little over about 3/4)
2 c. rice uncooked
1 c. shredded cheese
Lettuce, tomatoes, avocado, tortilla chips, ranch


Directions:
Brown hamburger then add 2 cups water & seasoning, bring to boil, stir in rice, sprinkle with cheese, cover & cook on low for 5 minutes. Top with lettuce, tomatoes, avocados, tortilla chips, ranch (optional, Kurt likes it)

Crockpot Chicken & Potatoes

Ingredients:
5-6 potatoes cut up
carrots
frozen chicken tenderloins
cream of mushroom soup
cream of chicken soup
salt
pepper
minced onions


Directions:
Peel and cut potatoes - place on crockpot.
Layer carrots over top of potatoes.
Layer frozen chicken over carrots.
Mix cream of chicken and cream of mushroom soups in bowl. Add salt, pepper, and onions to taste. Spoon over chicken in crockpot. Cook 6 hours on high - 8 hours on low. Mix occasionally during cooking.

Spicy Romano Chicken

Ingredients:
Sauce:
1 pint heavy cream
4 Tbsp. butter
2 tsp. salt
1/2 tsp. pepper
1/4 cup romano cheese
1/4 cup parmesan cheese
2 tsp. cayenne pepper (WAY WAY SPICY - 1/2 or 1 tsp for less spice)

Ingredients:
10 oz. bowtie pasta cooked and drained
1 1/2 Tbsp. melted butter
1/4 cup slice green onions
1/2 cup sliced mushrooms
7-8 oz precooked sliced grilled chicken
1/8 cup sundried tomato pesto
1 oz. heavy cream


Directions:
To prepare the sauce: Melt butter in skillet. Add cream, salt and pepper. Heat to a boil. Remove from heat and fold in cheese and cayenne pepper. Set aside.

For Ingredients: In skillet over medium heat, melt butter, then add mushrooms, green onions, and sundried tomato pesto. Stir for 1 minute. Next add chicken. Stir in 1 oz. have cream and 1/2 of the sauce. Add pasta followed by rest of the sauce. Stir gently. Serve.

3 cheese Manicotti

Ingredients:
10 manicotti shells
1 15 oz carton Ricotta cheese
2 1/2 cups mozzarella cheese
1/2 cup grated parmesan cheese
1 egg, beaten
1 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. salt
1 jar (26 oz) spaghetti sauce


Directions:
Cook shells according to pkg. Meanwhile, in large bowl, combine the ricotta cheese, 1 1/2 cups mozzarella cheese, parmesan cheese, egg and seasonings.
Drain shells.
Spread 1 cup spaghetti sauce into ungreased 9x13 pan. Stuff manicotti shells with cheese mixture; arrange over sauce. Top with remaining sauce.
Cover and bake at 375 for 40 minutes. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer.
