BBQ Beef Sandwiches

Ingredients:
3 cups chopped celery
1 cup chopped onion
1 cup ketchup
1 cup bbq sauce
1 cup water
2 Tbsp. vinegar
2 Tbsp. worcestershire sauce
2 Tbsp. brown sugar
1 tsp. chili powder
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1 boneless roast (3-4 pounds)


Directions:
In slow cooker, mix all ingredients except roast. Mix well. Add roast. Cover and cook on high 6-7 hours or until tender. Remove roast; cool. Shred meat and return to sauce; heat through. Serve on buns.

Taco Dinner

Ingredients:
1 lb beef
1 pkg taco seasoning (I only use a little over about 3/4)
2 c. rice uncooked
1 c. shredded cheese
Lettuce, tomatoes, avocado, tortilla chips, ranch


Directions:
Brown hamburger then add 2 cups water & seasoning, bring to boil, stir in rice, sprinkle with cheese, cover & cook on low for 5 minutes. Top with lettuce, tomatoes, avocados, tortilla chips, ranch (optional, Kurt likes it)

Crockpot Chicken & Potatoes

Ingredients:
5-6 potatoes cut up
carrots
frozen chicken tenderloins
cream of mushroom soup
cream of chicken soup
salt
pepper
minced onions


Directions:
Peel and cut potatoes - place on crockpot.
Layer carrots over top of potatoes.
Layer frozen chicken over carrots.
Mix cream of chicken and cream of mushroom soups in bowl. Add salt, pepper, and onions to taste. Spoon over chicken in crockpot. Cook 6 hours on high - 8 hours on low. Mix occasionally during cooking.

Spicy Romano Chicken

Ingredients:
Sauce:
1 pint heavy cream
4 Tbsp. butter
2 tsp. salt
1/2 tsp. pepper
1/4 cup romano cheese
1/4 cup parmesan cheese
2 tsp. cayenne pepper (WAY WAY SPICY - 1/2 or 1 tsp for less spice)

Ingredients:
10 oz. bowtie pasta cooked and drained
1 1/2 Tbsp. melted butter
1/4 cup slice green onions
1/2 cup sliced mushrooms
7-8 oz precooked sliced grilled chicken
1/8 cup sundried tomato pesto
1 oz. heavy cream


Directions:
To prepare the sauce: Melt butter in skillet. Add cream, salt and pepper. Heat to a boil. Remove from heat and fold in cheese and cayenne pepper. Set aside.

For Ingredients: In skillet over medium heat, melt butter, then add mushrooms, green onions, and sundried tomato pesto. Stir for 1 minute. Next add chicken. Stir in 1 oz. have cream and 1/2 of the sauce. Add pasta followed by rest of the sauce. Stir gently. Serve.

3 cheese Manicotti

Ingredients:
10 manicotti shells
1 15 oz carton Ricotta cheese
2 1/2 cups mozzarella cheese
1/2 cup grated parmesan cheese
1 egg, beaten
1 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. salt
1 jar (26 oz) spaghetti sauce


Directions:
Cook shells according to pkg. Meanwhile, in large bowl, combine the ricotta cheese, 1 1/2 cups mozzarella cheese, parmesan cheese, egg and seasonings.
Drain shells.
Spread 1 cup spaghetti sauce into ungreased 9x13 pan. Stuff manicotti shells with cheese mixture; arrange over sauce. Top with remaining sauce.
Cover and bake at 375 for 40 minutes. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer.

Supper in a Dish

1lb ground beef, browned and drained
1 1/2 cup sliced raw potatoes
1 c carrots, sliced
1 c peas
1/2 cup onion, chopped
1/2 cup celery chopped
1/4 cup green pepper, chopped
1 tsp salt
1/4 tsp. pepper
1 can cream of chicken/mushroom soup
1/4 cup milk
2/3 cup sharp cheese, grated

Layer ground beef and veggies in crock pot, sprinling with salt and pepper as you layer. Combine soup and milk. Pour over layered ingredients. Cover and cook on HIGH for 4 hours. In the last 20-30 min, sprinkle with cheese and allow to melt.

Fried Rice

1-2 chicken breasts, chopped
3 scrambled eggs (chopped fine)
2 carrots, finely grated
1/2 white onion, finely chopped
3/4 cup frozen peas
1/2 cup butter
1-2 garlic cloves minced, or 1 tsp garlic powder
2 cups white rice (not instant)
Soy sauce

Marinate chicken in soy sauce, or mix it with chicken before cooking. Cook chicken in small amount of olive oil. Add carrots and onions and saute' until clear. Add frozen peas. Cook until soft. In separate pan, make and add rice to the mixture. Add scrambled eggs. Melt butter and add garlic then pour into mixture. Mix all together well. Add soy sauce to taste.

Egg Fu Yung

2 cups Celery, chopped
2 cups onion, chopped
2 cups chicken, chopped
2 cups bean sprouts
9 eggs

Mix all ingredients together until foamy. Spoon mixture onto fry pan. Fry until brown and turn over and brown the other side.

You may also mix and store mixture in refrigerator for up to 3 days and then fry when you want.

Chicken Flautas with Sour Cream Salsa

1/2 cup chopped onion
1 clove garlic
2 Tbsp shortening
1 Tbsp cornstarch
1 1/2 tsp salt
1/2 tsp pepper
1/2 cup chicken broth
1 can diced green chilies
4 chicken breasts, cooked and shredded
cheddar cheese, grated

Saute' onion and garlic. Stir in shortening, cornstarch, salt and pepper. Add broth, green chilies and chicken. Fill flour tortillas with mixture. Add cheese; roll up and fry in 1/4 inch of hot oil. Serve with sour cream salsa.

Sour Cream Salsa:
1/2 cup sour cream
1 tsp. lime zest
1 Tbsp lime juice
3 Tbsp chopped cilantro
2 plum tomatoes, seeded and chopped.

Bean Salad

1 pk cherry tomatoes
1 bag Fritos chips
1 red pepper, chopped
2 green onions, chopped
1 can kidney beans
1 can garbanzo beans
1 green pepper, chopped
1 can olives
1 small bottle Catalina dressing

Mix all ingredients together then add chips.

Breakfast Casserole

1 pk crescent rolls
7 eggs
7oz can diced green chilies
onion
1 cup bacon
1 cup cheese

Press crescent rolls on bottom of 9x13 pan. Beat all ingredients and pour over top. Bake at 350 for 20-25min.

Nacho Pie

1 lb hamburger
1/2 onion
8oz tomato sauce
2 Tbsp taco seas.

1 pk refrigerated crescent rolls
1 1/2 c tortilla chips
1 cup sour cream
1 cup cheese

Simmer first 4 ingredients 5min. Press crescent rolls on pie pan. Cover with half the chips. Layer meat mixture, sour cream, cheese, then chips.

Bake at 350 for 20min.

Crock Pot Chicken Burritos

4-5 chicken breasts
1 jar salsa
8oz sour cream
1 pk taco seasoning

Cook chicken in crockpot with salsa for 6hrs on low. Shred chicken and add sour cream and taco seasoning. Cook for 30 more minutes.

Serve on warm tortillas with favorite toppings.

Sweet White Corn Bread (goes with white bean chili)

1/2 cup butter
1 cup sugar
2 eggs
1 1/2 cups flour
2 tsp baking powder
1 cup buttermilk cornmeal
1/2 tsp salt
1 1/2 cup milk

Melt butter then add other ingredients. Beat together & pour into greased cake pan. Bake at 350 for 25min.

White Bean Chili

3 16oz cans Great Northern White beans
4 cups chicken cooked
1 Tbsp olive oil
2 med. onions chopped
4 garlic cloves
2 4oz cans mild green chilies
2 tsp oregano/cumin
1 1/2 tsp cayene pepper
6 cups chicken broth

Cook chicken in olive oil with onions, garlic, and spices. Add other ingredients. Cook 20-25min.

Taco Soup

1 large bottle Pace Picante Sauce (4lb)
5 chicken breast, cooked and cut into pieces
1 box (32oz) chicken broth
2 cans corn
2 cans kidney beans

Garnish:
Cheese, tortilla chips, olives, sour cream, cilantro

Cook chicken in Picante sauce 20-30min. on med. heat. Add other ingredients, cook 15min. Garnish.

Makes a lot!

Pepperoni Pizza Twist

1 pkg sliced pepperoni, diced
1 small can chopped olives
2 Tbsp parsley
1/2 cup shredded mozzarella cheese
2 Tbsp flour
1 garlic clove
2 pkg (11oz) Pillsbury refrigerated french bread dough
1 egg
1 tsp Italian seasoning
2 Tbsp Parmesan cheese
1 jar pizza sauce, warmed

Preheat oven to 375. Combine pepperoni, olives, parsley, cheese, flour, and garlic. Mix well. Slice each loaf halfway through lengthwise; press open flat to about 4 inches. Spoon mixture on each loaf. Gather edges over filling and pinch to seal. Place loaves seam side down in an X, cross ends to form a figure 8.

Beat egg white and seasoning mix. Lightly brush over dough. cut a 3-in slit in each of the top sections to reveal filling. Grate parmesan cheese over loaf. Bake 30-35min until deep golden brown.

Serve with warm pizza sauce.

Pizza dough

1 T yeast
1 cup HOT water
1 Tbsp sugar

3 Tbsp oil
1/2 tsp. salt
2 cups flour

Dissolve yeast in hot water, add sugar and let set until dissolved. Add other ingredients, flour last. Let raise 10min. Spread out over a pizza stone or pan and bake at 450 for 15min.

Philly Cheese Steak Pizza

1 pizza crust
1/2 Onion
1 Green Pepper
Mushrooms
7 slices white American cheese (or mozzarella for those american cheese freaks) :)
7 slices Provolone Cheese
1/2 lb Roast beef, sliced thin

Saute' onion, pepper, and mushrooms. Spread layer of American cheese, then veggies. Crumble roast beef and spread on top. Top with a layer of slived provolone. Bake according to crust directions, or until provolone starts to brown.

Quesadillas

1/2 lb chicken strips
1/2 cup salsa
1 green or red pepper, cut into strips
1/2 cup sliced onions
1 1/2 cups cheese
2 cloves garlic
2 tsp chili powder
1/2 tsp ground cumin
6 flour tortillas

Spray skillet and cook chicken. Add green pepper and onion and cook until crisp-tender. Pour in salsa and cook 3 min more until heated through.

Place 1/4 cup mixture and 1/4 c cheese on each tortilla. Fold over to enclose filling and cook 2 min each side or until heated through.

Sloppy Joes

1 lb hamburger
1 Tbsp brown sugar
1 teas Worchestershire sauce
1 Tbsp mustard
1/2 cup ketchup
1 can chicken gumbo soup
onion flakes
salt & pepper

Brown hamburger and season with salt, pepper, and onion. Add other ingredients and cook 15-20 min.

Chinese Chicken Salad

Green Leaf lettuce
chopped chicken
chow mein noodles
dried cranberries
pineapple chunks
mandarin oranges
almonds, chopped and roasted

Dressing:
1/4 cup sugar
2 tsp salt
1/2 tsp pepper
2 tsp seasoned salt
1/2 cup olive oil
1/3 cup rice vinegar

I usually 1/2 the dressing recipe unless you're making a lot

This salad is also good with the BreAnna's Poppy Seed dressing, if you don't want to make this one. :)

Special Delivery Chicken

2 cups sour cream (I use less)
1 can Cream chicken Soup
2 tsp Poppy Seeds
2 1/2 cups cubed cooked chicken
1 3/4 cups crushed Ritz crackers (1 ream)
1/2 cube butter melted (sometimes I leave this out)
1 cup cheese
1-2 green onions

In a bowl, combine sour cream, soup, cheese, and poppy seeds. Stir in chicken. Pour into 11x7 pan. Combine cracker crumbs and butter, sprinkle over top. Bake uncovered at 350 for 25-30min, or until heated through.

Serve with rice or biscuits.
